Butternut Squash Veggie Pasta Puree

Recommended for 8 months and up. (Please speak to your babies pediatrician/doctor about starting new foods before you try anything. Introduce one new food at a time, look out for allergic reactions, and remember that all new foods should be introduced to babies at least three days apart.)

I know butternut squash might look intimidating to cook, but its relatively easy to prepare. I promise!

Pasta is loaded with carbohydrates, which can be very good for babies, and babies need carbohydrates! Carbohydrates are an infant’s main fuel source, and essential for proper growth and development.

My son absolutely loved this recipe I came up with, and I was tempted to eat it all myself. I have been loving fall season with all the butternut squash stocked up in the grocery stores. Something about butternut squash roasting in my oven makes me happy, and my son seems to love it blended in almost anything!

Butternut Squash Veggie Pasta

Prep Time: 10 minutes

Cook Time: 45 minutes

Total Time: 55 minutes

Yield: 14 servings

Ingredients

  • 1/2 small/medium butternut squash
  • 1 full cup of cooked pasta
  • 2 cups of raw kale
  • 1 cup of chopped raw asparagus
  • 2 apples
  • 10 basil leaves (torn)
  • 1/4 cup of cottage cheese
  • 3/4 cup water
  • sprinkle of nutmeg (optional)
  • Dash of olive oil.

Instructions

  1. Preheat oven to 400 degrees. Wash the outside of the butternut squash. Cut the butternut squash in half, and lightly drizzle olive oil on butternut squash. Bake in the oven for 45min or until tender. When done, peel the skin off and set aside half of the butternut squash. (Use the other half for yourself, or save for another day.)
  2. Cook pasta accordingly to package, set aside.
  3. Bring steamer to a boil. Place Asparagus in steamer basket, wait one minute then add kale and basil, continue cooking for another 6 minutes or until everything is tender.
  4. Bring a separate steamer or pot a boil. Add apples and steam until tender, about 8 minutes.
  5. Add all ingredients (including cottage cheese, water, and nutmeg) to a food processor and puree until desired consistency for baby.
  6. Store in food freezer tray.

Notes

(If you don't have a steamer, you can always steam your fruits and veggies in a pot filled with shallow water.)
