curry chicken caribbean wrapI’ve never had so much fun creating a wrap. This turned out better than I thought it would, and I would go so far to say its the best darn wrap I ever had. Although, I don’t eat too may wraps….but still, this one was the bomb diggity bomb. I think I had my whole family raving about this wrap after I made it. There was some trial and error creating the wrap, and I’m still uncertain whether I prefer it hot or cold, but either way, the end result was spectacular. 

This idea came to me after visiting my boyfriends parents house. His step dad blended Jamaican curry powder, and some sort of all purpose seasoning together to put on the chicken we were grilling. The results were amazing! I couldn’t help to think while I was eating how delicious the curry chicken would taste in a wrap…..and oh boy was I ever right. Black beans, cilantro, red onion, curry chicken, and lettuce with a sweet mayo mustard sauce. Mmmm…. These ingredients were just meant to be together. I’ll be enjoying making these wraps all summer. Heck, even in the winter.

If you’re wondering, the brand I used for the Jamaican curry powder, and Jamaican all purpose seasoning is called “Cool Runnings”. I am confident that you should be able to get away with using any other Jamaican or Caribbean curry powder. As well as the all purpose seasoning. Just make sure its Caribbean style, as Caribbean curry taste different from other curries.

Ingredients
  1. 10 boneless skinless chicken strips
  2. 1 tablespoon canola oil (or your choice of oil), for frying
  3. 1/4 cup curry seasoning, Jamaican style
  4. 3 tablespoons all purpose seasoning, Jamaican Style
  5. 1 cup of black beans, drained
  6. 4 cups of mixed salad greens
  7. 1/4 cup cilantro, chopped
  8. 1/3 cup red onion, chopped
  9. 8 inch whole wheat tortillas
FOR THE SAUCE
  1. 1/3 cup mayonnaise
  2. 1/2 tablespoon mustard
  3. 1/2 tablespoon honey
Instructions
  1. Heat a pan over medium to high heat. Add oil. Mix curry powder and all purpose seasoning together in a bowl. Dip each chicken strip into the bowl to coat.
  2. Add chicken to hot pan, and cook over medium heat for about 5 minutes, or until no longer pink. Off the heat and place in bowl aside. Shred or cut into smaller pieces.
  3. To separate bowls, add black beans, mixed salad greens, cilantro, and red onion each to their own separate bowl.
  4. To make the sauce, mix all the ingredients for the sauce together in a bowl.
  5. To eat cold, add desired amount of each ingredient and sauce to one tortilla. Wrap tortilla, then place in fridge in saran wrap for at least 2 hours to allow flavors to immerse.
  6. To eat hot, heat tortilla in a clean dry pan over low heat for about 1 minute. Heat beans in pot or microwave. Add desired amount of each ingredient and sauce to one warm tortilla. Wrap tortilla and serve immediately.
