Blackened Chicken Caribbean Salad With Spicy Pineapple Dressing

As you can see, things are starting to look a little tropical around here. Hey, I am a mother to a 18 month old baby…who is clearly in desperate need of a vacation. Lately I have been daydreaming of being on an island far, far away. Where I can no longer clap my hands if I am happy and know it, and where the wheels on the bus no longer go round and round. Well, If I can’t go to the Caribbean, I will have to bring it to me.

Let’s get straight to business. This salad is amazeballs! Like, hella good. Yes, hella is a word. I looked it up in the Urban Dictionary and errythang. I don’t need to convince you this salad is yummy, just look at those avocados (which I struggled to cut so perfectly). Okay don’t stare too hard at the avocados. Instead lets go over these healthy ingredients:

  • Avocado

  • Mango

  • Coconut

  • Sliced Almonds

  • Purple Onion

  • Carrots

  • Chicken

  • Fresh Spring Salad Mix

Did I forget to mention that this is ready in just 30 minutes?  YES! Healthy and quick!

The spicy pineapple dressing is to die for! I got inspired to create my version of this dressing after seeing it posted on Cooking Light. I had to make a few changes in order for it to fit my Caribbean salad and Blackened Chicken. I didn’t add the orange juice, instead I used fresh lime juice. It also wasn’t sweet enough for me, so I added some honey. I decided not to add the habanero peppers, and instead added chili flakes. I adjusted all the ingredients, and something was still missing to my taste-buds, so I added a tiny bit of salt…..and voila! The perfect dressing for my blackened chicken and Caribbean salad.
