Who else is eager for
spring summer? Yes, I skipped over spring because I am not a fan of the bugs and pollen it brings. The pollen in Georgia is awful. The whole city of Atlanta is blanketed in pollen during the spring time. Like dude, my car is orange…and it’s supposed to be blue.
I’m sure you can tell that I am overly excited for summer by my tropical drink. Excuse me while I pretend that I am relaxing on an island, drinking a tropical pineapple smoothie. A girl can dream can’t she? I was in Caribbean heaven while drinking this.
I was feeling a little bold, so I went out and bought real coconuts to try and blend into my smoothie. Well, I couldn’t get the coconuts to open. So I started searching online for videos on “how to open a coconut”. I have seen some people saying to:
- bang it with a hammer
- run into the wall with it
- or smash it onto the floor
They say not to believe everything you read on the internet, but I was frustrated and running out of hope. This coconut needed to be open. So I took one of the coconuts, and ran straight into the wall with it. Of course this didn’t work. I probably didn’t do it hard enough, I mean, I didn’t want to ruin my wall.
In case you are wondering, the other two options didn’t work either. Yes, these two coconuts are still sitting pretty on my kitchen counter. Like, I just want a drink of fresh coconut water *crying face*. I can’t complain though, they did make a lovely decoration to my photography. Who wants to spend time opening a coconut for an easy smoothie recipe anyway? Not me. I like my smoothies quick, and tasty!
I have a determined and tenacious personality though, so these coconuts will open! To be continued….
Tropical Pineapple Smoothie With Flax Seeds – A tropical pineapple smoothie with mango, banana, and coconut milk. A dollop of Greek yogurt, touch of honey, and a sprinkle of flax seeds. A simple, healthy, and yummy recipe!
- 1/2 cup frozen pineapple chunks
- 1 cup frozen mango chunks
- 1 banana, cut into small chunks
- 1/2 cup coconut milk
- 1 tablespoon plain greek yogurt
- 1 tsp. honey
- sprinkle of ground flax seeds, a little less than 1/4 tsp.
- Place all ingredients into a blender. Blend until smooth. 1-2 minutes.
This smoothie makes exactly 2 cups. It can serve one really hungry person, or can be divided among two people.
