You read that right! I said 20 minutes. Any meal that I can make in 20 minutes or less has my name written all over it. Who in the world wants to stand there and make a 2 hour ramen meal? Ramen is supposed to quick, tasty, and foolproof. So if I was going to make a fancy ramen bowl, y’all better bet I made it simple.

Let’s be honest, ramen is addicting but not the healthiest. So how about we ditch the crack pack, (that’s my made-up name for the seasoning packets) and load the pot with kale, carrots, mushrooms, and a much healthier seasoning. Don’t fret, you’ll still have your slurping delicious ramen cause this homemade version taste 10x better!

On another note, I am so excited to be back to blogging! My blog is my baby, and I have neglected it in the last few of months. Some major events happened in my life that were out of my control, and I couldn’t continue working on it like I wanted to. 2016 was a roller coaster for me, but I am happy to leave it behind and start 2017 doing what I love. Easy Homemade Chicken Ramen

Easy Homemade Chicken Ramen – The simplest homemade ramen you will ever make. I promise! A quick and easy 20 minute recipe for ramen, that’s healthier and yummier than the store bought version.

Easy Homemade Chicken Ramen

Ingredients
  1. 1 tablespoon sesame oil
  2. 1 tablespoon of ginger, freshly grated
  3. 4 garlic cloves, minced
  4. 4 cups of rich chicken stock
  5. 3 tablespoons soy sauce
  6. 1 cup of fresh shiitake mushrooms, sliced
  7. 1 tsp. Worcestershire sauce
  8. 1 tablespoon oyster sauce
  9. 1 tablespoon rice vinegar
  10. 2 dashes of chilli powder
  11. 3 cups of water
  12. 2 to 3 packages of instant ramen, (packets discarded, use noodles only)
  13. 2 cups of cooked chicken, shredded (you can use any cooked chicken)
  14. 1 cup carrot, shredded
  15. 1 and 1/2 cup of kale, chopped
Optional Toppings
  1. Sliced green onion
  2. Sesame seeds
  3. Sriracha chili sauce
  4. Boiled egg, cut in half
Instructions
  1. Heat sesame oil in a large pot over medium heat. Add ginger and garlic, and stir fry until fragrant (1-2 minutes).
  2. Add the chicken stock, soy sauce, shiitake mushrooms, worcestershire sauce, oyster sauce, rice vinegar, chili powder, and 3 cups of water. Bring to a boil, then lower heat and simmer for 10 minutes or until mushrooms have softened.
  3. Add the cooked chicken and instant noodles. Cook for 2-3 minutes until noodles have loosened and softened. Add the carrots and kale and stir to combine. Off the heat and serve immediately with optional toppings. Top with your choice of green onions, sesame seeds, sriracha chili sauce, or boiled egg.
